Cheezy Tuna Melts I

Tuna melts are super easy and delish! A perfect recipe for a light lunch or dinner. It's good with some fruit, salad or potato chips.

I have not had tuna melts for a while so I decided to make these for dinner today. Since I do not have English muffins or other types of bread, I just used hot dog buns and regular white bread. Next time, I'll post more tuna melts. :)


Here is my recipe:
Ingredients:
1 (6 counce) can tuna, drained
2 tablespoon Miracle Whip
1 fresh key lime (Mexican Lime) juice
a pinch of garlic & salt seasoning
a pinch of  black pepper
2 hot dog buns and 3 slices of white bread, toasted
slices of tomatoes
black olives
slices of sweet onion
slices of american cheese

Preheat oven to broil. Mix tuna, Miracle Whip, lime juice, black pepper and garlic and salt seasoning in a small bowl. Spread tuna mixture onto the bread and place them on a baking sheet. Top with a slice of tomato, a slice of sweet onions, some slices of black olives and a slice of cheese. Broil until cheese is melted, about 3 to 5 minutes.

This is my burnt cheese tuna melt but still taste good! ;)

Baked Salmon

I wanted to cook the salmon fillets. I was not sure what to do with it. So I flipped through my recipe books and none seems to interest me. I went online and checked out Allrecipes.com. Found Baked Salmon II. It's just what I wanted... As recommended, I made some changes, and it turned out wonderfully.. I poured the little bit of the sauce over my steamed broccoli, carrots and crabmeat... ((yumyum)) This recipe will become a staple in our weekly menu. Thanks LADYBLADE for sharing the recipe. :o)

Ingredients:
2 salmon fillets
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp melted butter
3/4 tsp basil
1/2 tsp salt
1/2 lemon juice
1 tsp dried parsley
dash of dill weed
1 stalk green onion, cut about 2cm long
a few slices of lemon

In a medium glass bowl, prepare marinade by mixing garlic, olive oil, melted butter, basil, salt, pepper, lemon juice, parsley and dill weed. Massage the oil mixture into the salmon. Place the salmon and the oil mixture in a zip lock bag. Marinate in the refrigerator about 1 hour. 

Preheat oven to 375 degrees F (190 degrees C).

Using the aluminum foil; throw the chopped spring onions on the bottom then place the fillets, cover with marinade. Add slices of lemon atop each fillets prior to closing up the packets. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

Grilled Cod with Lemon and Chilli

For one week, its gonna be fish and vegetables. No rice, no meat and no fried food. That is the plan. We'll see how it goes... My recipe tonight was very simple and healthy. The original recipe used hake fillets but I had to change it to cod. Here is my Grilled Cod with Lemon and Chilli. Steamed broccoli and spinach with my cream sauce as side dishes. The fish is ideal meal for occasions when something light is called for. :))

Ingredients:
4 cod fillets
2 tbsp olive oil
finely grated rind and juice of 1 lemon
1 tbsp crushed chilli flakes
salt and ground black pepper

Preheat grill(broiler) to high. Brush fillets all over with olive oil and place them skin side up on a baking sheet.
Grill(broil) the fish for 4-5mins, until the skin is crispy, then carefully turn the fillets over in the pan, using a metal spatula.
Sprinkle the fillets with the lemon rind and chilli flakes and season with salt and ground black pepper.
Grill the fillets for a further 2-3 minutes, or until the hake is cooked through. (test using the point of a sharp knife; the flesh should flake).
Squeeze over the lemon juice just before serving.

Variation
Any firm white fish can be cooked in this simple, low-fat way. Try halibut, hake or hoki.
If you haven't got any chilli flakes, brush the fish with chilli oil instead of olive oil.

Nasi Goreng Tuna ( Fried Rice Tuna)

Yesterday, after hubby came home from work, we went to visit our friends.  Then we decided to go back home before it gets dark. Before going to the main road, we had a small road accident. Thankfully, we were not hurt but I was petrified. Even when you drive with cautious, accident happened out of nowhere. The speed was not even at 20... the truck skidded in the curve on the icy+wet road and went into the embankment. Luckily no other vehicles around when it happened. We tried but unable to get the truck back on the road. Slowly, one by one came.. I think there were about 6-7 vehicles stopped by. Three of them said, they go back and get their truck to help us. I am thankful, that there are some nice and helpful people. My hubby and I want to shout out to the couple who helped us. They drove home asap and came back. With their help, we managed to get out and get home. Unfortunately, we didn't get their name. To the couple, we really appreciate your help. Thank you and god bless you. 

Anyhoo, for dinner, I cooked a simple  nasi goreng tuna. It could be better if only I had some slices of tomatoes. It was simple and delicious. (I had more servings than hubby.. hehe) This is one of my favorite food. There are some dishes that both of us have different taste.  What he like, I may not really like and vice versa. Whenever I cook something that I want to eat and knows he will not like as much as I do, I will cook another dish that he would go for more bites. For this nasi goreng tuna, I made some home-made spring rolls to go with it.. Hubby had many servings of these spring rolls. Lol!!!

Ingredients:
2 cups rice, cooked
1 can tuna flakes, divided, drained
2 tbsp blended cili
3 cloves garlic, chopped
2 eggs
salt to taste
cooking oil

Stir the rice with a fork to separate the grains. Heat wok or large saucepan over medium heat, place garlic and saute until fragrant. Add blended chili and stir for a minute. Add 1 tablespoon of tuna and salt to taste, continue to stir. Add cooked rice and mix. Then push the rice to the sides and break the eggs. Scramble the eggs and mix it in with the rice, stirring briskly for 5-10 minutes. The remaining tuna, sprinkle with some lemon juice and heat in the microwave for 1 minute. Serve nasi goreng tuna, topped with cooked tuna and chopped spring onions.

Asam Rebus

Now, I am back to the blog world. Its been a while.... Right now, I am still trying to settle in and I cant wait to start something in the kitchen.. My own little corner..

Last night, I've made a local dish that mom cooked regularly back home. This is one of my favorites. Its Asam Rebus. It is a hot and sour dish. I remember when mom cooked this for us and she wanted us to eat, she always trick us by saying "if you want to be on diet, eat this soup more, then you'll lose weight..." hahaha.. Usually mom used mackerel (ikan kembung) or golden band scad (ikan selar kuning) with long beans and tomatoes for this recipe. Since I am unable to get these fishes here, I went for easy one, no fish and veges and not too spicy.

I think this not a good photo, becoz at that point of time, i did not think of my blog.. luckily, i managed to get a pic before i start digg in... I added rice to the soup..


You'll need:
1 big onion
2 garlic
2 dry chillies, cut and soak
1/4 tsp ginger powder
1 dried tamarind fruit slices (asam keping)
salt and pepper to taste
alittle bit of sugar
imitation crab meats

Blend onion, garlic, ginger powder and chillies in the blender. In a big saucepan, add a little oil to stir fry the mixture. Then add water. Bring everything to boil. Lastly, add the crab meats, salt and pepper to taste.
